In India this particular winter sweet dish is passed on as a family recipe from elderly women to the next generation..I feel it’s a kind of dish that though I have seen my mom prepare it for us about zillions of time but I’m still unsure about the ingredients she puts in, the proportions of the ingredients & the standard procedure she follows..the reason for this fact might possibly be that these sweet ladoos (balls) need more customization as per your taste sensibilities. .some may like Cashew nut very much others may hate it..some may like it to be more sweet others would like it Medium to less sweetened..
Here’s my kind of tried, tested & tasted recipe forRich Dry fruit & Gond Ladoo ..
Preparation & Molding Time: 60 mins
Makes: 30-35 medium size Ladoos (Balls)
Ingredients:
150gms Desiccated Coconut
100 gms Powdered sugar (As per taste)
1 cup Pure Ghee/ Clarified Butter
2-3 tbspn Khus-Khus/ Poppy seeds
1/2 tsp Nutmeg Powder
1/2 tsp Cardamom Powder
50 gms Edible Gum/ Resin / Gond(in Hindi)
Dry fruits:
100 gms De-seeded Kharak/ chuare/ dry dates
150 gms Cashew Nuts
200 gms Almonds
50 gms Walnuts
50 gms Pistachios
50 gms Raisins
Method:
Set aside all the ingredients required for the recipe and now start from dry roasting the Poppy seeds. Grind the roasted poppy seeds into a fine powder.
Now roast the desiccated Coconut & Kharak. Allow both to cool and now grind them together into a medium-fine powder.
Mean While when you have left the Coconut and Kharak for cooling, heat 1 tablespoon of Ghee & fry the Raisins until golden. Set them aside and now in the same pan add rest of the dry fruits to dry roast them for say about 2 min. with regular turning & tossing.
Heat 2 Table spoon of Ghee & now fry the Edible Gum/ Resin. Allow it to cool and then grind it into fine powder.
Lastly grind all the dry fruits except the Raisins in a mixer until they converted into medium fine powder.
Now in a pan mix all of the these powdered ingredients with Sugar, Nutmeg & Cardamom powder and Raisins. You can also heat the mix for 1 min with constant stir..
After this add Ghee into the mix and stir well.
Lastly shape them up with your hands into small to medium sized uniform balls and your Rich Dry fruit & Gond Ladoos are ready..
