These days markets are full of apples and who can give these red beauties a pass. So brought some home and here was thinking new recipes to try my hand at with the core ingredient being Apples. I have already tried my hands at baking apple pie with a very simple recipe. So didn’t want to repeat it. So I decided to make an Apple muffin with nuts & raisins.  These are best served at tea time or at breakfast. So here’s my tried and tested recipe for the same which I have adapted as per my preference. I found the original recipe on Mr. Food. 
Preparation Time: 45 mins (excluding the dough & apple rest time) 
Makes: 15 Cup Cakes
Ingredients:
  • 250 gms. All Purpose Flour
  • 70-80 gms. Powdered sugar
  • 3 Tsps. Baking Powder
  • 1 tsp. Ground Cinnamon plus a pinch of nutmeg powder
  • 1/2 tsp. Salt
  • 2 Eggs
  • 100 ml. Milk
  • 1 1/2 Apple peeled and finely chopped
  • 6 tbsps. Clarified Butter (Ghee)
For sprinkling on top
  • Mixed Nuts (Chopped )& Raisins
  • Brown sugar
Method:
  • In a bowl mix flour, powdered sugar, baking powder, cinnamon powder, nutmeg powder, and salt.
  • Now in another bowl, blend or beat together eggs and milk. Then add melted clarified butter and finely chopped apple chunks. Mix well.
  • Pour in the liquid apple – egg mixture in the dry flour mixture and stir gently until the entire powdery mixture is moistened. to form a stiffer mixture than the usual cake one.
  • Preheat the oven at 190 degree Celsius. Add the mixture in scoops to the already greased and floured 6 or 12-cup muffin mold until it fills 3/4 of the mold size.
  • Sprinkle on the top of each muffin a as per your choice brown sugar, nuts & raisins.
  • Finally bake it at 190 degree Celsius for about 15 minutes or until they pass the toothpick test.
 Tip: You can pour some warm apple sauce on top while serving to your family & guests for added flavor.
