Kebabs are a non-vegetarian’s favorite and my family too, is totally in love with it. They are a hot favorite when made on festivals, special days or just on a no-occasion day. Especially on a cold winter evening there is nothing like a barbecue at home!
There are innumerable types of kebabs known but my bad that till today I have been able to try my hands on only the more popular ones like Shami, Seekh, Galouti..
This time around at New Year I planned to ditch meat kebabs and made delectable yet healthier Chicken Shami Kababs. 🙂
So here’s my tried and tested recipe for Chicken Shami Kebabs:
Preparation Time: 1 Hr.
Makes: 30 medium sized kebabs
Ingredients:
Ingredient Set 1 (for cooking chicken):

Chicken Mince: 400-500 gms.

Onion: 1 medium sized, roughly chopped

Ginger-Garlic Paste: 3 Tbsps.

Roasted Chanay/ Chana Dal: 3/4 cup

Cumin Seeds: 1 Tsp.

Coriander Seeds: 1 Tsp.

Black Peppercorns: 8-10 No.
-
Cloves: 4-5 No.

Black Cardamoms: 2 No.

Green Cardamoms: 2-3 No.

Whole red chilies: 4-5 No.

Cinnamon stick: 1 inch piece

Bay leaves: 1 whole

Salt to taste
- Little Oil
Ingredient Set 2 (For preparing the kebabs):

Coriander: a Small Bunch, finely chopped

Onion: 1/2 finely chopped
-
Green Chilies: 2-3 finely chopped
-
Egg: 1 No. (whisked)

Garam Masala: 1 Tsp.

Oil for frying
Method:

In a pan add the oil and after heating it add all the whole spices of ingredients set 1.

After they fry a little add ginger-garlic paste, onion, red chilies, and chana dal till the onions become translucent.

Now add the chicken mince, mix all ingredients well and then cover & cook until it is cooked completely. Tip: Mince will turn white once its cooked completely and the water will dry up.

After the chicken is cooked let it cool for 5-10 minutes and then transfer the mixture in a large food processor jar and grind the contents into a little granular-smooth paste.

Remove the cinnamon stick, black cardamom, and bay leaves, all the other spices will grind in the food processor.

Now transfer the chicken mixture in a large bowl.

To it add onion, green chilies, coriander leaves & garam masala. Mix it well and adjust salt. To make it more spicy you can add a little red chili powder.

Now add the whisked egg. Mix well.

Next taking small portions of the kebab mix, shape it in round balls and then flatten them to give it a disc shape.

Lastly heat little oil in a frying pan and shallow fry one or two kebabs initially to check if they are breaking or ok. If the kebabs tend to break you can add a little more roasted chana dal powder.

If the kebabs seem to fry nicely fry the entire batch. The flame should be minimum at first and then cook on medium flame. For calorie conscious people shallow frying is a good option. These days air fryers are also available in market but personally I haven’t tried cooking these on the air fryer.
