History behind Making of Hot Cross Buns
The making of these buns using yeast and all spices mix dates back to 12th century. It is one of the traditional Easter food recipes. There is an interesting superstition around these buns; it is said that these buns if made on Good Friday day don’t get spoiled or moldy. These can be kept for one whole subsequent year until the next batch is made. Another superstition is that these buns were taken along during a ship journey so as to protect from ship wreck.
Traditional Recipe of Making Hot Cross Buns
The traditional recipe of making Hot Cross Buns is by using yeast, however, now some recipes also help one make it without yeast. In addition to using yeast, an all-spice mix and citrus peels or candied citrus bits and currants are used. Furthermore, the cross on top of these buns make it easy to identify. This is made using white flour & water solution piped on top of the bun to make a cross symbol.
Chocolate Chip Hot Cross Buns Recipe
Introduction
This recipe of hot cross buns with chocolate chips has little variation from the traditional one. With children in house, their love for chocolate and dislike towards currants ought to be tackled. So this recipe is more child-friendly and kids are sure to super-like the buns.
Ingredients
All-purpose Flour: 350 gms. approximately 2 and 1/2 cups
Warm Milk: 200 ml.
Granulated Sugar: 50gms.
Active Dry Yeast: 2 1/2 Tsps. (If using Instant Yeast then add 2 Tsps.)
Cinnamon Powder: a big pinch (you can add a little more if you like that strong Cinnamony flavor)
All Spices Powder : a big pinch
Nutmeg Powder: a big pinch (or more if you love it just like us!)
Salt: 3/4 Tsps.
Egg No. : 1
Unsalted Butter : 45 gms.
Raisins/Currants/Chocolate Chips : 3/4 Cup (approx. 100 gms.)
Vanilla Extract :1 Tsp.
Orange peels grated or Candied Orange very small chunks
Method:
-> Sift the all-purpose flour and salt, all spices powder, cinnamon powder & nutmeg powder together.
-> In a small bowl, add the warm milk, yeast and sugar. Stir a little. Keep this bowl aside for 10-15 minutes to activate the yeast. Once the solution becomes frothy, it is ready to be used.
-> In a big bowl beat the egg and milk. Next add the butter to this mix and vanilla extract. Blend it well. Add the activated yeast mix in this liquid mixture.
-> Now fold in the dry ingredients in it to make a sticky dough lump. To smoothen the dough knead the sticky dough.

-> Keep the dough in a clean big bowl and secure the top of bowl with a cling film. Let this rest for proofing for at least 2 hrs. or until it becomes visibly double in size.
-> Once the dough doubles in size, it is time for a quick knead. Then add the orange peels, chocolate chips and fold divide it in to 11-12 equal portions. Roll them to form round bun balls and keep in the pre-greased baking tray. Keep some space between each ball. Again cover this tray from top with a greased cling film. Further, let it sit for about 45 mins or an hour.

-> The Hot cross bun balls will increase in size a little more. Make a semi-runny paste of flour and water. Fill it in a piping bag and make cross over the bun balls. Alternatively one make this cross symbol using icing after the bun have been baked and cooled.

-> Finally, preheat the oven to 190 degreed Celsius or to 375 degrees Fahrenheit. Bake it at this temperature for about 10 minutes. Next reduce the oven temperature to 180 degrees celsius or 350F and bake for another 10-15 minutes. The homemade Chocolate Chip Hot buns recipe is done.

-> For Glaze on the buns: I used 2 Tbsps. of Orange Juice and 2 Tbsps. of Butter. Mix theses well and brush on top of the freshly baked Hot Cross Buns.
